Pazo Cilleiro is rooted in the Val do Salnés, widely considered the birthplace of Albariño in Rías Baixas. Located in Meis, in the heart of Galicia, the winery benefits from a strong Atlantic influence, where cool ocean breezes and a network of estuary-fed valleys shape wines with freshness, minerality, and vibrant acidity.
Pazo Cilleiro sources grapes from a network of small vineyard plots across Salnés, totaling approximately 80 hectares and cultivated by around 250 independent growers. These long-standing relationships ensure consistent quality and a true expression of regional terroir. Vines, typically 20–25 years old, are trained in the traditional pergola (parral) system—ideal for airflow, grape health, and optimal ripening in this humid, coastal climate.
Winemaking is focused on precision and purity. Grapes are harvested at optimal ripeness, carefully selected, and gently pressed. The must undergoes cold settling followed by temperature-controlled fermentation. The wine is then aged on fine lees to enhance texture and aromatic complexity before resting in bottle prior to release.
Near the estate, the historic Monastery of Armenteira stands as a reminder of the region’s deep-rooted connection to viticulture. Today, Pazo Cilleiro continues this legacy, crafting Albariño wines that capture the character, freshness, and authenticity of Spain’s most iconic white wine region.
